Vegan Mushroom Soup

My first veganized recipe post :)


Yesterday I adapted a vegetarian recipe from the Australian Mushroom Grower's Association (AMGA)  for cream of mushroom soup that I really enjoyed before I became vegan. It wasn't a huge challenge, the only ingredients I had to substitute were vegetable oil for butter, and tofutti sour cream for dairy cream .... so not particularly difficult. And like the original, it was delicious.


  


Vegan Cream of Mushroom Soup 
(adapted from AMGA recipe)
Serves 6

2-3 Tb vegetable oil
2 medium leeks, trimmed, halved and thinly sliced
2 garlic cloves, crushed
300g flat mushrooms, diced
300g cup mushrooms, diced
1/3 cup plain flour
4 cups vegetable stock
1/3 cup tofutti cream (or possibly non-dairy milk)
1/3 cup chopped parsley
 Toasted bread, to serve
1. Heat oil in a large saucepan over medium-high heat. Add leeks and garlic and cook, stirring often, for 3-4 minutes or until soft.
2. Add mushrooms and cook, stirring occasionally, for 10 minutes or until mushrooms are tender. Add flour and cook, stirring constantly, for 2 minutes.
3. Gradually add stock, stirring constantly. Bring to the boil, stirring constantly, over high heat. Reduce heat to medium-low and stir occasionally, for 10 minutes.

4. Remove from heat and process to desired consistency (i.e. with food processor, blender, barmix). Stir in cream and parsley. Heat soup over medium-low heat, without boiling, until hot. Serve with toasted bread.

As I was cooking this yesterday, I watched through the glass screen doors as storm clouds massed in the sky outside. The room darkened as the sunlight was obscured and then it rained. It was glorious. And definitely made the bowl of soup I had for lunch more satisfying.

About

The house I'm looking after has a creek that softly gurgles and splashes all day long and the light this afternoon was so clear I couldn't resist taking a picture. Or three.


So, for my first post I'm going to ramble a little and share a few details about myself and possible future post topics.

My name is Alex and I live in Perth, Western Australia, the most remote city in the world.

I am vegan. And so happy to be. I will always be thankful to my gorgeous friend Sherryn for her starring role in my introduction to veganism. Becoming vegan is one of the best, perhaps the best, lifestyle decision I have made.

I am currently studying residential drafting. Architectural design is an addiction and reluctant passion of mine. My reluctance is not entirely negative; it is a by-product of the perfection and time I seem to be unable to deny my work. The allowances are certainly productive :)

Studying full time and working part time requires excellent time management. This is something I hope to improve; for my sanity and so I can follow a normal sleeping pattern (not the holding pattern I have held for the past month).

I enjoy cooking and experimenting with food. Being vegan has forced me to become more independent and resourceful in the kitchen. So every now and then I will be posting recipes I have adapted, veganized or created.

Also I often find myself distracted by little details or moments. The photos of the creek at the start of my post are an example of one such observation. I think I will be including more in posts to follow.

And that is all I feel like writing tonight :)





... I do have to admit sourcing the title for this blog from a Doctor Who episode ... I'm not entirely sure why it appeals or how it relates to my life. I just like it.
